Tasty Tuesday / Lasagna

Who doesn't love Lasagna? In the slightly altered words of Elizabeth Bennet - "I never knew such a person, for they would certainly be a fearsome thing to behold." I couldn't agree more, Lizzy!

I love good Italian food, it is second only to tacos in my mind. It's no surprise that these are the two types of food most associated with my childhood. Lasagna specifically is what I consider soul food. I grew up with my mom making homemade Lasagna pretty regularly so when I got married, asking for the recipe was pretty much a no brainer. Due to the picky nature of my family, I've made a few tweaks over the years to cater it to our specific tastes a little more and it has become the most requested meal and recipe my friends ask me for. Lucky for all who ask, it's incredibly simple!


1-1.5 Large Jars of Pasta Sauce (We like Newman's Own Tomato Basil)
1 Large Bag of Shredded Mozzarella Cheese
Small container of Cottage Cheese
Parmesan Cheese
1-1.5 lbs of Ground Turkey or Grass Fed Beef (I commonly do a half and half mixture of the two)
1 Package of "Oven Ready" Whole Wheat Lasagna Noodles (because I'm real classy)
2 Tablespoons of Italian Seasoning
Teaspoon of Minced Garlic

Preheat oven to 350 degrees. Cook up your ground turkey/beef with Italian Seasoning and Minced Garlic. Drain any grease then sprinkle a very thin layer on the bottom of a 13x9 inch pan. Then layer in order: Noodles, meat, parmesan, cottage cheese, sauce and mozzarella. Continue with the layering until the sauce is on top. Finish off with a thick layer of mozzarella and parmesan. Cover with aluminum foil and bake for 45 minutes or until bubbly and noodles are done!


*For an added health boost I also like to put a layer of spinach between the sauce and cheese each time!
