Pineapple Fried Rice

When it comes to meals that make the rotation at Casa MacD, there are three requirements:

This meal is an almost weekly staple in our house because it fits all three requirements and it's easy on the grocery budget. What more could you want, I ask you?

Here are the easy peasy, yummy details!

Pineapple Fried Rice

1.5-2 lbs of cut up and cubed chicken breasts or tenderloin strips
2 TBSP of butter or Sesame oil (whichever you prefer for taste or allergy sake)
1 TBSP of minced garlic

Throw this in your frying pan and cook until chicken is just barely done.
Then toss in 2 eggs, scramble them up and cook until both the eggs and chicken are done.

Then throw in 3-4 cups of frozen veggies - broccoli, peas, corn, carrots - whatever you like, throw it in. Open a can of pineapple, drain it and toss it in. Splash your Braggs or Soy Sauce on top, stir and cover with lid for about 15 minutes. Stir occasionally and serve with rice. 
To ensure it is a 30 minute meal from start to finish - start cooking your rice when the chicken first starts cooking, or save yourself some dishes and buy the handy dandy microwaveable packs of rice from Trader Joe's!
